ICE WINE

Ice wines rank among a speciality of local wine growers.
They come from grapes harvested early in the morning after going through the minimum frost of –6°C, and they are processed still frozen. This enables the water to remain inside and only  cider of a high sugar content flows out in the course of wringing.
The whole process is very risky and the yields are low. This makes it a very rare delicacy – a sort of honey-sweet wine, immensely aromatic, with a low alcohol content.
It tastes wonderful as aperitif, digestant or with desserts.
It is served chilled to 7-10°C.
